COMPLEX
VITICULTURE:
This
wine is made from an assemblage of Tempranillo, Garnacha, Merlot, Cabernet,
Graciano and Mazuelo varieties reflecting the utmost essence of the
vineyards of SenorÌo de SarrÌa located in Sotes. The vines
range from 10 to 54 years of age. The vineyards are dvided into lots
according to their condition and the grapes are harvested at the optimal
stage of maturity in each spot.
MAKING:
Traditional
fermentation at a controlled temperature of 260C-280C (78.80F-82.40F).
After the malolactic fermentation and the subsequent decantings, it
is left in new Allier oak casks for 3-6 months, depending on our oenologistís
criteria.
TASTING:
Stunning
on the nose and on the mouth, exceptional personality. Medium-high bigarreau
cherry-red colour. Incense aroma of red and black fruits and hints of
violet and Allier wood. Complex and whole wine. the balance between
sweet tannins and acidity in the mouth results in a serene wine. Serve
at 160C (60.80F). Ideal for white meats, lamb, cod stew, pasta and rice.
