VITICULTURE:
This
wine has been made from grapes harvested a the optimum stage of ripeness
of each vineyard and plot
MAKING:
The
harvest is done at the optimum stage of ripeness of each vineyard plot.
The must ferments according to traditional methods and at a controlled
temperature of 280C (82.40F) until it is removed from the barrels and
aired. Malolactic fermentation and several decantings precede the ageing
process, which is performed in French oak casks for one year. Once bottled,
the wine remains in the winery for at least one year before it is finally
commercialized.
TASTING:
Violet red colour. Complex aroma with advanced varietal nuances. Persistent
and long on the palate, strong sensation on the nose. Serve at 15-180C
(59-64.40F).
Ideal for red meats, stews and cured cheeses.
