ELEGANT
VITICULTURE:
This
wine is made from Graciano grapes from SenorÌo de SarrÌa's
plot n07. Hand-harvested at the exact stage of maturity, the grapes
are carefully selected at this over-50-years-of-age vineyard.
MAKING:
Traditional
fermentation for 15 days at a controlled temperature of 260C-280C (78.80F-82.40F).
After the malolactic fermentation and the subsequent decantings it is
filled into the new Allier oak casks for 3-6 months, depending on the
estimation of our oenologist.
TASTING:
The
wines resulting from this ancient vine have an intense cherry-red colour
with lively hints of deep-red. Fresh-cut wood, woodgrowth and own varietyís
aromas on the nose. Vanilla and coconut tinges from its stay in the
cask. Fruity on the mouth with gentle tannins and a persistent aftertaste.
Soft, elegant and clean. Serve at 160C (60.80F). Ideal for cold meats,
stews and soft meats.
