POWERFUL
VITICULTURE:
The grapes come from the southernmost vineyard of
SenorÌo de SarrÌa, which is the first to be harvested,
at the exact stage of ripeness.
MAKING:
The
grapes ferment at 280C (82.40F) and are left to macerate 10 more days
until the must is removed from the barrels. After the malolactic fermentation
and the decanting, the ageing process starts. The wine is kept for 16
months in the American oak casks, it is decanted twice and once bottled,
it is left in the bottle rack for one year.
TASTING:
Intense
ruby-cherry red colour. Powerful and classic varietal aroma with vegetable
shades. Fleshy and rich on the palate. Elegant with hints of cedar,
vanilla and fruits. Serve at 15-180C (59-64.40F). Ideal for roast and
stewed meats, as well as for cold meats..
