LENGTHY
VITICULTURE:
This
wine is made from Chardonnay grapes harvested at the Vinedo No.3 (Vineyard
No.3) of SenorÌo de SarrÌa, located some 50 metres from
the winery.The
conditions of this vineyard are especially favourable for growing these
grapes, which result in fresh and fruity wines.
MAKING:
After
harvesting and pressing the grapes at the optimum stage of ripeness
they are left to macerate for 4-6 hours at low temperatures. The must
is then separated from the skins and decanted into fresh Allier oak
casks, where it is left to ferment for 120 days with the lees.
TASTING:
Golden
yellow colour, bright. Toasty and fruity aroma, mostly apple. Hints
of fruits, flowers and varieties with smoky finish. Serve at 8-100C
(46.4-500F). Ideal for seafood, charcoal-grilled fish, poultry, foie-gras,
appetizers and rice.
