SOLID
VITICULTURE:
The
grape comes from SenorÌo de SarrÌa's own vineyards as
well as from other vineyards whose viticulture is controlled and monitored
by SenorÌo de SarrÌa. It is basically elaborated with
two varieties: Tempranillo and Cabernet Sauvignon.
MAKING:
The grapes are gently pressed, and the resulting must is left in
contact with the skins during the slight maceration in the stainless
steel tanks. The must is then extracted by gravity and cooled to favour
its natural clarification, a process which lasts 16 hours. The clean
must is decanted and the fermentation begins at a temperature of 160C
(60.80F) for 12-15 days.
TASTING:
Independent vinification by varieties at a controlled temperature
of 280C (64.40F). After the malolactic fermentation, the wine is decanted
and put in the cask. While the wine is being aged for around one year
in American oak casks it is decanted twice. It is then bottled and kept
for several additional months in the winery before it is finally commercialized.
