GRAPE:
100% Cabernet Sauvignon proprietor's single vineyard grapes, from
ungrafted selected clones of pre-philloxera French rootstock.
SOIL:
Loam and clay soil, medium to low fertility, well drained gravely
subsoil.
PROCESSING:
Harvested by hand and carried to the winery in 18 Kg. boxes immediately
after cutting. Fermented to dryness in 30.000 liter oak tanks for 7
days at 25-28†C controlled temperature. Extended skin maceration for
additional 10 to 14 days. 100% malolactic fermentation. Stored in oak
tanks at 14-16†C for four months, and aged in 225 liter American and
French oak barrels for further 8 months before bottling. Aged in bottles
for at least 6 additional months before release.
